The Lodge is the food & drink concept at the Snow Centre in Hemel Hempstead. Turning over c£1.5m p/a it is an important revenue stream for the business. The business was seeing significant wait times on food and below-average customer feedback as well as struggling to deliver food quality consistently well.

The brief
What we did
Developed new food menu, maintaining the brand focus on the ‘Alpine’ experience. Reduced skill level in the kitchen to focus the team on consistent, quicker food delivery, whilst maintaining quality on each dish. Delivered tools to aid consistency including food specification manuals, along with other tools such as food costings and allergens. Renegotiated the food contracts to deliver savings.

Customer feedback improved by 21%, main impact being reduced wait times and consistency of dish presentation and taste. New procurement deals saved c£30k p/a.
Sales growth during the initial 6 month peak trade period was over 11%.
